La disidratazione porta alla formazione di una crosta esterna e al cambiamento di consistenza, che col passare del tempo,\u00a0passa da elastica a dura fino a diventare granulosa e poi friabile. Le nostre caciotte di latte vaccino, ovino e\u00a0bufalino si accompagnano perfettamente ad un buon bicchiere di vino rosso!
